Light up your Christmas with these festive salads. Salads add colour to the Christmas menu, it’s healthy, and fresh.
But salad doesn’t have to consist of iceberg lettuce, tomatoes and cucumber. A gourmet salad can be the focus of your Christmas meal and can be fancy and healthy as you want.
Here’s some ways to salad up your Christmas menu this year:
1 cup of pearl wheat, 2 sticks of cinnamon, 1 tsp. of ground coriander, 1 tsp. of turmeric, 1 tsp of salt, 1 litre of water, 1/2 cup of natural yogurt, chopped apple with green skin left 1/2 cup seedless raisins
Add cinnamon, turmeric, coriander, salt to the water. Bring to the boil. Pour in the washed wheat, bring to the boil and simmer for 1 hour (or follow cooking instructions on the packet) until wheat is soft. Drain, remove the sticks of cinnamon and allow to cool. Gently mix remaining ingredients and chill before serving.
RICE SALAD WITH PEACHES
1 small can of peaches in natural juice or make your own stewed peaches (crisp not soft) 1/2 green pepper, finely chopped walnuts (if calorie quote allows), 3 gherkins chopped, 2 cups of cooked rice (use your favorite rice although brown rice makes a delicious salad or Pasta) natural yogurt, salt to taste, Black pepper and freshly chopped parsley.
Mix together the peaches, green pepper, walnuts, gherkins add the rice and stir lightly combine the yogurt, salt, pepper and parsley and mix gently.
Just a hint: The above two salads can be made the day before, covered with cling wrap and kept in the refrigerator. Any combination of ingredients can be added to the rice. Do not include vegetables like tomato or cucumber which would make the salad soggy
THREE BEAN SALAD
This salad is made from a combination of dried beans – butter beans, red kidney beans or haricot beans. Cook and drain the beans and while still hot, mix in the onions, parsley and French dressing. Leave to cool and sprinkle fresh parsley over just before serving. One variation is to take two dry beans and add chopped green beans. This gives an appetising colour combination as well.
Red and green apples, cored and diced, celery thinly sliced chopped, walnuts, natural yogurt 2 tsp of lemon juice, lettuce. Stir apples into the lemon juice and let stand for 5 minutes add celery, walnuts, yogurt, and mix well place in lettuce leaves and serve on a flat platter Add diced cooked chicken to turn this salad into a meal Or serve on Lettuce.
DRIED FRUIT SALAD
This can be served as a desert
Use dried fruit which includes apples, apricots, pears and prunes soak overnight in apple juice simmer for 15 minutes or until tender pour into a serving bowl and sprinkle with nuts serve hot or cold with natural yoghurt
Have a large raw salad at least once a day. This is the best possible way of giving your body the nutrition it needs to re-balance and rebuild and restore optimal metabolism.
